Place copies of the Mirror Place Holder file in your source directory and Anarchie will ignore the corresponding file or folder on the remote site. For example, place a copy of the file named "logs" in your directory and then Interarchy will ignore the corresponding directory named "logs" when it mirror uploads rather than deleting all your log files.
